Let me introduce my style easer & less-fat & less-sugar Bûche de Noël (Yule log) 🪵🌟😋 cake 💕

This recipe will be good for

size 30cm x 30cm (12inch x 12inch) pan💕

🪵 Cocoa Roll:

  • Whole Egg 250g (Large 4-5)
  • Granulated sugar 70g
  • Honey 15g
  • Pastry Flour 35g
  • Cocoa powder 20g
  • Warm Milk 30g & Butter 15g (put in the same bowl, and put into the warm water bowl to make better melt)

🐮 Chocolate Whipped Cream:

  • 300g heavy whipped cream (150g warm, 150g cold)
  • 100g dark sweet chocolate

Good pastry flour is the key. I use Nisshin Violet Pastry extra fine flour for extra fluffiness.

Good flour has short shelf-life. Do not use old flour. Actually this violet flour has excellent result for crunchy Tempura as well🍤😋

PREP:

  •  Sift the flour and cocoa powder (I shift three times since cocoa powder has so many tiny lumps, I make sure any lumps go away.)
  • Pre heat oven 200-210c / 390-410f (setting temperature may very different depending on the oven)
  • Put baking sheet on the pan(30x30cm/12ix12inch)

🪵COCOA ROLL

Put into pre-heated oven, bake 10-12min (I baked 12min)

🐮 Chocolate Whipped Cream:

🍫To melt chocolate…. add chocolate chips or chopped evenly chocolate into the bowl…. and put it in the warm water bowl 50-50c (122-140f)

(use warm water…. not the boiling water !!! That way, you can keep the Chocolate’s natural fragrance😊Be careful, no water-splash into the chocolate 💦)

🐮 Add 150ml warm heavy whipped cream into the melted chocolate little by little…. mix well…. add little again,,, mix well… so important to add little by little.💕

🐮 Add 150ml cold heavy whipped cream in the same time. Put whole bowl in to the ice water.. whip it until it gets thicken💕

      1. 🦔 Yes but we don’t see him in winter. Often it’s more a matter of hearing him snuffling around under the hedge. Of course, it could be a female as we did once see little one in the border! Cute 🦔🙋‍♂️
